- 1 onion, chopped
- 2 celery stalks, chopped
- 2 carrots, chopped
- 3 cloves garlic, minced
- 1 pound chicken thighs or breasts, diced
- 1 cup brown or green lentils, rinsed
- 6 cups vegetable or chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 2 bay leaves
- 2 cups fresh spinach or kale
- Squeeze of lemon juice
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions, celery, and carrots for about 5 minutes until softened.
- Stir in minced garlic and diced chicken, cooking for another 5 minutes until the chicken is golden brown.
- Add broth and rinsed lentils, seasoning with salt, pepper, thyme, and bay leaves.
- Bring to a gentle boil, then reduce heat to low and cover. Simmer for 30-40 minutes or until lentils and chicken are tender.
- Stir in fresh greens and a squeeze of lemon juice before serving hot.
