Ingredients

- Lime juice (freshly squeezed)
- Spices (cumin, oregano, salt, and pepper)
Instructions
- In a large, heavy-bottomed pot, heat a splash of olive oil over medium heat. Add chopped onions and garlic, stirring until translucent and fragrant (3-4 minutes).
- Season chicken pieces generously with salt and pepper. Place them in the pot to sear for about 5-6 minutes until golden brown on all sides.
- Add quartered tomatillos and diced green chiles, stirring in cumin and oregano for flavor infusion.
- Add chicken broth to cover the chicken and vegetables. Bring to a gentle simmer, reduce heat to low, cover, and cook for 30-35 minutes until chicken is tender.
- Remove chicken, shred it, and return it to the pot, stirring to incorporate flavors.
- Off the heat, squeeze in fresh lime juice and top with chopped cilantro before serving.
