  • Spices (cumin, oregano, salt, and pepper)

Instructions

  1. In a large, heavy-bottomed pot, heat a splash of olive oil over medium heat. Add chopped onions and garlic, stirring until translucent and fragrant (3-4 minutes).
  2. Season chicken pieces generously with salt and pepper. Place them in the pot to sear for about 5-6 minutes until golden brown on all sides.
  3. Add quartered tomatillos and diced green chiles, stirring in cumin and oregano for flavor infusion.
