- 1 lb boneless, skinless chicken breasts or thighs, thinly sliced
- 1 cup provolone cheese or American cheese, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 8 oz cremini or white button mushrooms, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tbsp Worcestershire sauce or soy sauce
- Salt and black pepper, to taste
- Fresh parsley or oregano, chopped, for garnish
Instructions
- Slice the chicken thinly across the grain into bite-sized strips. Pat dry and season generously with salt and pepper.
- Slice the peppers into thin strips and the onions into crescents.
- Clean and slice mushrooms; mince garlic and chop herbs.
- Heat a large heavy skillet over medium-high heat. Add olive oil and a pat of butter.
- Add the chicken in a single layer and sear without moving for 2 minutes. Stir and cook until cooked through, about 3-4 more minutes. Remove chicken and set aside.
- In the same skillet, add more oil if needed. Sauté the onions and peppers until softened and caramelized, about 6-8 minutes.
- Add mushrooms and cook until they release their liquid, about 4 minutes. Add garlic for the final minute.
- Return the chicken to the skillet, add Worcestershire or soy sauce, and stir to combine. Adjust seasoning with salt, pepper, and lemon juice if desired.
- Reduce heat to low and layer cheese over the top. Cover to melt cheese, about 2 minutes.
- Finish with chopped parsley or oregano and serve hot with crusty bread or a salad.

Slice vegetables while the chicken rests to save time. Avoid overcrowding the pan to ensure even browning.
