Description
A delicious handheld meal that combines the flavors of a classic Caesar salad wrapped in a warm tortilla.

- 1 lb boneless chicken thighs or breasts
- 4 large romaine lettuce leaves
- 1/2 cup Parmesan cheese, freshly shaved or grated
- 2 cloves fresh garlic, minced
- 1 tsp anchovy fillets or 1 tsp anchovy paste
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/2 cup mayonnaise
- 3 tbsp olive oil
- 4 flour tortillas or whole wheat/gluten-free wraps
- 1/2 cup croutons or toasted breadcrumbs
Instructions
- Prepare the dressing by whisking together anchovy fillets, garlic, lemon juice, Dijon mustard, mayonnaise, and Parmesan. Slowly drizzle in olive oil while whisking until emulsified. Season with black pepper.
- Cook the chicken by seasoning with salt, pepper, and oregano. Sear in olive oil over medium-high heat for 4-6 minutes per side until cooked through. Rest for 5 minutes and then slice thinly.
- Tear romaine into large pieces and if using herbs, chop them. Pulse croutons in a food processor if you want them finer.
- To assemble, lay a warm tortilla flat, spread dressing in the center, then layer lettuce, chicken, Parmesan, and croutons. Roll tightly, folding in the sides first.
- Slice the wrap in half and serve immediately or wrap tightly for later.
Notes
For a lighter dressing, swap half the mayonnaise for Greek yogurt. You can also substitute chicken with sautéed mushrooms or grilled tofu for a vegetarian option.
