- 1 – 1.5 pounds pork tenderloin
- 1 cup fresh cherries, pitted and halved
- 1/2 cup balsamic vinegar
- 2 shallots, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme
- 1 teaspoon fresh rosemary
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season the pork tenderloin with olive oil, salt, and pepper.
- In a skillet, sear the tenderloin over medium-high heat for 2-3 minutes on each side.
- Remove the tenderloin and sauté the shallots and garlic in the same skillet until fragrant.
- Deglaze the pan with balsamic vinegar.
- Add cherries, thyme, and rosemary, and let simmer for 5 minutes.
- Return the tenderloin to the skillet, spoon the sauce over, and transfer to the oven.
- Bake until the internal temperature reaches 145°F (63°C), about 20-25 minutes.
- Let rest for 10 minutes before slicing and drizzling remaining sauce over each slice.
Notes
Do not skip the searing step to retain moisture and enhance flavor.
