Ingredients

  • 11.5 pounds pork tenderloin
  • 1 cup fresh cherries, pitted and halved
  • 1/2 cup balsamic vinegar
  • 2 shallots, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the pork tenderloin with olive oil, salt, and pepper.
  3. In a skillet, sear the tenderloin over medium-high heat for 2-3 minutes on each side.
  4. Remove the tenderloin and sauté the shallots and garlic in the same skillet until fragrant.
  5. Deglaze the pan with balsamic vinegar.
  6. Add cherries, thyme, and rosemary, and let simmer for 5 minutes.
  7. Return the tenderloin to the skillet, spoon the sauce over, and transfer to the oven.
  8. Bake until the internal temperature reaches 145°F (63°C), about 20-25 minutes.
  9. Let rest for 10 minutes before slicing and drizzling remaining sauce over each slice.

Notes

Do not skip the searing step to retain moisture and enhance flavor.
