Description
Delicious pizza rolls made with sourdough discard, melted cheese, and herbs, perfect for snacking or as a meal.

- 1 cup sourdough starter discard (unfed), room temperature
- 1 cup warm water (about 105–110°F)
- 2 ½ to 3 cups all-purpose flour, plus extra for dusting
- 1 teaspoon active dry yeast (optional for a lift)
- 1 teaspoon sugar or honey
- 1 teaspoon fine sea salt
- 2 tablespoons olive oil, plus more for brushing
- 2 cups shredded mozzarella (or a blend of mozzarella and provolone)
- ½ cup grated Parmesan or Pecorino
- 1 cup sautéed mushrooms and onions (optional)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil or a handful of fresh torn basil
- 2 cloves garlic, minced, or 1 teaspoon garlic powder
- Red pepper flakes to taste
Instructions
- In a mixing bowl, combine the warm water, discard, sugar, and yeast (if using). Whisk briefly and let sit for 5–10 minutes until small bubbles appear.
- Add 2 ½ cups flour, salt, and olive oil. Stir until a shaggy dough forms. Knead on a floured surface for 6–8 minutes until smooth.
- Place the dough in a lightly oiled bowl, cover, and let rise in a warm spot until doubled, usually 60–90 minutes.
- Heat a skillet over medium heat and sauté sliced mushrooms and diced onions until golden. Add garlic and season. Remove from heat and let cool.
- In a mixing bowl, combine cheese, half the grated Parmesan, mushroom-onion mixture, and red pepper flakes.
- Roll the dough into a rectangular shape, brush with oil, sprinkle with remaining Parmesan, and add cheese mixture, then roll tightly into a log.
- Cut into 10–12 pieces and place in a greased pan. Cover and proof for 30–45 minutes. Preheat oven to 400°F (200°C).
- Bake for 18–22 minutes until golden. Brush with melted butter mixed with garlic powder before serving.
Notes
For chewier rolls, use bread flour. Handles better if rested after baking.
