Ingredients

  • 3 large Russet or Yukon Gold potatoes, cut into bite-sized pieces
  • 1 cup sharp and mild cheddar cheese, shredded
  • 1 lb smoked beef sausage, sliced
  • 2 tbsp ranch seasoning
  • 2 tbsp butter, melted (or olive oil)
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and peel (if desired) your potatoes. Cut them into bite-sized pieces.
  3. In a skillet over medium-high heat, cook the smoked beef sausage until browned and crispy. Set aside.
  4. In a large mixing bowl, combine the potatoes with melted butter, ranch seasoning, salt, and pepper. Toss until well-coated.
  5. Fold in the cooked sausage gently.
  6. Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
  7. Sprinkle shredded cheese over the top.
  8. Bake in the preheated oven for about 45 minutes, or until potatoes are tender and cheese is bubbly and golden.
  9. Let it cool slightly, garnish with fresh herbs, and serve.

Notes

For additional flavor, consider adding sautéed onions or bell peppers. Ensure potatoes are seasoned well for the best taste.
