Description

A comforting one-pan meal that combines seasoned ground beef, long-grain rice, and melted cheese with colorful vegetables for a family-friendly dish.

Ingredients

Scale
  • 1 lb ground beef (or ground turkey/plant-based protein)
  • 1 cup long-grain white rice (or brown rice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 cup sliced mushrooms
  • 1 cup cheddar cheese (or queso blanco/Monterey Jack)
  • 2 cups beef broth (or vegetable broth)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp seasoning salt
  • 2 tbsp olive oil (or butter)
  • Optional toppings: sour cream, avocado, fresh cilantro

Instructions

  1. Prepare Your Ingredients: Chop the onion, garlic, bell pepper, and mushrooms.
  2. Cook the Beef: In a large skillet, heat olive oil over medium heat. Add ground beef, breaking it apart, and cook until browned (5-7 minutes). Drain excess fat if necessary.
  3. Sauté the Vegetables: Add onion and garlic; sauté until softened (2-3 minutes). Then add bell peppers and mushrooms; cook until softened (3-5 minutes).
  4. Add Rice and Spices: Stir in rice and spices, toasting briefly (about 1 minute).
  5. Pour in Broth: Add beef broth, bring to a boil, then reduce heat, cover, and let simmer for 15-20 minutes until rice is tender.
  6. Cheesy Goodness: Sprinkle cheese on top, cover, and let melt for about 5 minutes.
  7. Garnish and Serve: Top with sour cream, avocado, or cilantro, and serve hot.

Notes

For added richness, use butter instead of olive oil. Adjust spice levels according to taste.
