- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup Gruyère cheese, grated (plus extra for topping)
- 1/2 cup Parmesan cheese, grated
- Fresh herbs (thyme or parsley)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and sliced mushrooms; sauté for 5-7 minutes until mushrooms are golden brown.
- Add minced garlic and sauté for an additional minute.
- Season the chicken breasts with salt, pepper, and fresh herbs, then sear in the same skillet for 3-4 minutes on each side until browned.
- In a mixing bowl, whisk together the heavy cream and chicken broth; fold in the Gruyère cheese.
- Pour the sauce over the chicken and mushrooms, ensuring an even coating.
- Top with remaining Gruyère cheese and Parmesan.
- Bake in the preheated oven for 25-30 minutes, until the chicken is cooked through and cheese is bubbly and golden.
- Let sit for a few minutes before serving, garnished with fresh herbs.
Notes
Can substitute heavy cream with Greek yogurt or a plant-based cream. Different cheese varieties can be used for varied flavors.
