  • 2 cans (15oz) canned great northern or navy beans
  • 4 cups chicken or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried thyme or rosemary
  • 2 cups sharp cheddar cheese, shredded

Instructions

  1. In a large pot over medium heat, melt the butter and sauté the diced onions, carrots, and celery for about 5 minutes until softened.
  2. Add minced garlic and cook for an additional minute.
  3. Add the diced ham and drained beans, stirring to combine.
  4. Pour in enough broth to cover the mixture and bring to a gentle boil.
  5. Toss in herbs, salt, and pepper to taste.
  6. Lower the heat and let it simmer for about 20 minutes.
  7. Gradually stir in the cheddar cheese until melted and combined.
  8. Taste and adjust seasoning as needed before serving.
