- 1 diced onion

- 2 diced celery stalks
- 2 cloves minced garlic
- 2 cups diced ham
- 2 cans (15oz) canned great northern or navy beans
- 4 cups chicken or vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dried thyme or rosemary
- 2 cups sharp cheddar cheese, shredded
Instructions
- In a large pot over medium heat, melt the butter and sauté the diced onions, carrots, and celery for about 5 minutes until softened.
- Add minced garlic and cook for an additional minute.
- Add the diced ham and drained beans, stirring to combine.
- Pour in enough broth to cover the mixture and bring to a gentle boil.
- Toss in herbs, salt, and pepper to taste.
- Lower the heat and let it simmer for about 20 minutes.
- Gradually stir in the cheddar cheese until melted and combined.
- Taste and adjust seasoning as needed before serving.
Notes
Serve hot, garnished with additional cheese or fresh herbs. Great to pair with crusty bread or a fresh salad.
