- 8 oz cream cheese, softened
- 1 cup sharp cheddar cheese, grated
- 1 cup Monterey Jack cheese, grated
- 2 cloves garlic, minced
- 1 medium onion, diced
- 1/4 cup fresh cilantro or green onions, chopped
- 1 tsp cumin
- 1 tsp chili powder
- Optional: 1/4 cup crispy bacon bits
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté diced onions and garlic in a swirl of olive oil until translucent.
- Combine softened cream cheese, corn, cheddar, and Monterey Jack in a mixing bowl.
- Add the sautéed onion and garlic, along with the spices, and mix well.
- Transfer the mixture into a greased baking dish and sprinkle with cheese and fresh herbs on top.
- Bake for 20-25 minutes until golden and bubbly.
- Let it rest for a few minutes before serving warm with tortilla chips or veggie sticks.
