Instructions
- In a large pot over medium heat, add a drizzle of olive oil. Once it shimmers, add the diced onions and minced garlic, and sauté until fragrant and translucent.
- Add the ground beef and diced ham to the pot. Cook until the beef is browned and cooked through, breaking it up for even cooking.
- Stir in the diced potatoes and sauté for a few minutes before adding the broth.
- Pour in the beef broth, ensuring it covers the ingredients. Bring to a gentle simmer for 20-25 minutes or until the potatoes are tender.
- Lower the heat, stir in the cream cheese until melted, followed by the shredded cheddar. Mix until creamy, then season with salt, pepper, and fresh herbs.
- Ladle the soup into bowls and garnish with additional herbs or cheese.
