- 400g spaghetti
- 150g pancetta, diced
- 3 large eggs
- 100g Parmesan cheese, grated
- 2 cloves garlic, minced
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook spaghetti in a large pot of salted boiling water until al dente.
- In a frying pan, cook pancetta until crispy, then add garlic and cook for another minute.
- In a bowl, whisk the eggs and mix in grated Parmesan cheese.
- Drain the spaghetti, reserving some pasta water, and add it to the pancetta in the frying pan.
- Remove from heat and quickly mix in the egg and cheese mixture, adding a bit of reserved pasta water to create a creamy sauce.
- Season with salt and black pepper before serving.
