- 2 cups sharp cheddar cheese, shredded
- Fresh herbs (e.g., thyme, parsley) for garnish

Instructions
- Prepare the ingredients: peel and dice the potatoes, dice the onion, and mince the garlic.
- Sauté the aromatics: in a large pot over medium heat, melt the butter and add the diced onion. Sauté until translucent, about 5 minutes, then add the garlic, cooking for an additional 2 minutes.
- Add the potatoes and broth: stir in the diced potatoes and pour in the broth. Bring to a boil, then reduce to a simmer. Cook until the potatoes are tender, about 15-20 minutes.
- Blend for creaminess: using an immersion blender, carefully puree the soup until smooth or blend half for a chunkier texture.
- Stir in cream and cheese: return the pot to medium heat and stir in the heavy cream and shredded cheddar until melted.
- Season and garnish: add freshly chopped herbs, salt, and pepper to taste. Serve with a sprinkle of cheddar on top.
Notes
This soup can be made in advance and freezes beautifully. Allow flavors to develop by simmering longer.
