- 4 large onions, sliced thinly
- 1 whole head of garlic
- 4 tablespoons olive oil

- 4 cups vegetable or chicken broth
- 1 cup heavy cream or coconut milk
- 1 tablespoon fresh thyme or rosemary, chopped

Instructions
- Prepare the Ingredients: Slice the onions thinly and separate the cloves of garlic from the head. Coat the garlic bulb with olive oil and wrap it tightly in foil.
- Caramelize the Onions: In a large skillet, heat the remaining olive oil over medium heat. Add the sliced onions, sprinkle with salt and pepper, and cook slowly for about 35-40 minutes, stirring occasionally.
- Roast the Garlic: Place the wrapped garlic bulb in the oven set to 400°F (200°C) for about 30 minutes or until golden and soft.
- Combine Ingredients: Once the onions are perfectly caramelized and the garlic is roasted, squeeze the garlic cloves into the onions. Add the broth and herbs, and bring the mixture to a simmer. Cook for an additional 10 minutes.
- Blend the Bisque: Using an immersion blender, carefully puree the soup until smooth. Alternatively, transfer it in batches to a traditional blender. Return to the heat.
- Finish with Cream: Stir in the cream or coconut milk, and heat through. Taste and adjust seasoning as necessary.
- Serve Hot: Ladle the bisque into bowls and garnish with croutons, fresh herbs, or pumpkin seeds.
Notes
Keep the heat low while caramelizing onions for the best flavor. Serve with crusty bread or a light salad.
