- ½ cup sugar
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 4 cups tart apples (like Granny Smith), peeled and sliced
- ½ cup brown sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 1 cup sugar (for caramel)
- ½ cup unsalted butter (for caramel)
- ½ cup heavy cream (for caramel)
Instructions
- Prepare the crust by mixing crushed graham crackers, sugar, and melted butter until well combined. Press into the bottom of a lined baking dish.
- In a bowl, whip softened cream cheese with sugar until fluffy. Add eggs one at a time, mixing well, and then stir in vanilla. Pour this mixture over the crust.
- Layer the sliced apples topped with a mixture of brown sugar, cinnamon, and nutmeg over the cheesecake layer.
- Bake in a preheated oven at 350°F for 30-35 minutes until the cheesecake is set and apples are tender.
- For the caramel topping, melt sugar over medium heat, then stir in butter and cream until smooth. Allow to cool slightly, then drizzle over cooled cheesecake.
Notes
For a nuttier crust, substitute digestive biscuits for graham crackers. Serve with vanilla ice cream or whipped cream for a delightful experience.
