- 1 cup honey
- 3 large eggs
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, cubed
- 1/4 teaspoon salt
- 1 1/4 cups all-purpose flour
- Ice water as needed
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the crust by mixing flour, salt, and cubed butter until crumbly. Gradually add ice water to form a dough and chill for 30 minutes.
- Caramelize the honey in a saucepan over medium-low heat until deep amber, about 10-15 minutes.
- Whisk together eggs, sugar, and salt in a bowl, then gradually mix in the heavy cream and caramelized honey until smooth.
- Pour the filling into the prepared crust.
- Bake for 40-45 minutes until the filling is set with a crackly top.
- Cool at room temperature, then refrigerate for at least two hours before slicing.
- Serve slices chilled or at room temperature, optionally topped with whipped cream.
Notes
For best results, monitor the caramelization of the honey and avoid overmixing the custard.
