Description

A vibrant and refreshing pasta salad featuring bow-tie pasta, cranberries, and colorful vegetables, perfect for any gathering.


Ingredients

  • 2 cups bow-tie pasta
  • 1 cup cranberries (fresh or dried)
  • 1 cup bell pepper, chopped
  • ½ cup cucumber, chopped
  • ¼ cup green onions, chopped
  • ½ cup toasted pecans or walnuts, chopped
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Boil a pot of salted water and cook the bow-tie pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. Prepare the ingredients by chopping the vegetables and nuts.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, honey or maple syrup, salt, and pepper.
  4. In a large mixing bowl, combine the cooled pasta, chopped vegetables, cranberries, and nuts. Pour the dressing over and mix gently.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be made a day in advance; just mix again before serving.
