Ingredients

- 2 cups bow-tie pasta
- 1 cup cranberries (fresh or dried)
- 1 cup bell pepper, chopped
- ½ cup cucumber, chopped
- ¼ cup green onions, chopped
- ½ cup toasted pecans or walnuts, chopped
- ¼ cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
Instructions
- Boil a pot of salted water and cook the bow-tie pasta according to package instructions until al dente. Drain and rinse under cold water.
- Prepare the ingredients by chopping the vegetables and nuts.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey or maple syrup, salt, and pepper.
- In a large mixing bowl, combine the cooled pasta, chopped vegetables, cranberries, and nuts. Pour the dressing over and mix gently.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
Notes
This salad can be made a day in advance; just mix again before serving.
