Description
Delicious egg rolls filled with a creamy blueberry mixture, perfect for dessert or a sweet snack.
Ingredients
Scale
- 1 cup fresh blueberries (thawed if using frozen)
- 8 oz cream cheese, softened
- 1/4 cup sugar (or substitute with honey or maple syrup)
- 1 tsp vanilla extract
- 8 egg roll wrappers
- Oil for frying (canola or vegetable oil)
- Optional: Powdered sugar for dusting or chocolate sauce for drizzling
Instructions
- Prepare the filling: In a medium bowl, combine the softened cream cheese, sugar, and vanilla extract. Mix until smooth and creamy. Gently fold in the blueberries, careful not to mash them.
- Wrap the egg rolls: Lay an egg roll wrapper on a clean, flat surface. Spoon 2 tablespoons of the blueberry mixture onto the wrapper. Fold the bottom corner over the filling, then fold in the sides. Roll tightly towards the top corner, sealing the edges with a dab of water.
- Heat the oil: In a large skillet, heat about 2 inches of oil over medium heat until hot.
- Fry to perfection: Place the egg rolls in the hot oil and fry for 2-3 minutes on each side until golden brown and crispy.
- Cool and serve: Allow the egg rolls to cool for a few minutes before serving. Dust with powdered sugar or drizzle with chocolate sauce.
- Pro Tip: For a healthier version, bake at 425°F (220°C) for 15-20 minutes, turning halfway through.
Notes
Avoid overfilling the wrappers and ensure edges are well sealed to prevent bursting during cooking.
