- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz. cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh blueberries (or frozen)
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of a lined 8×8-inch baking dish. Bake for about 10 minutes or until golden. Let it cool while you prepare the filling.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add the sugar and mix until well combined. Incorporate the eggs and vanilla extract, mixing until creamy. Gently fold in the blueberries to keep them whole for a lovely burst of flavor in each bite.
- Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula. Bake for 30 to 35 minutes or until the edges are set but the center still has a slight jiggle.
- Allow the bars to cool at room temperature before refrigerating them for at least 4 hours. Once chilled, lift the bars out of the dish using the parchment paper, slice into squares, and enjoy!
Notes
Use room temperature cream cheese for a smoother batter. If using frozen blueberries, drain excess liquid before adding.
