- 1 pound shrimp, deveined
- 8 ounces cremini or shiitake mushrooms, sliced
- 2 tablespoons paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cayenne pepper (adjust to taste)
- 4 tablespoons butter
- 1 cup vegetable or chicken broth
- 1 cup sour cream or Greek yogurt
- 8 ounces egg noodles (or whole wheat/gluten-free pasta)
- Fresh parsley or chives, for garnish
Instructions
- Clean and devein the shrimp, patting them dry with a paper towel.
- In a small bowl, combine paprika, garlic powder, onion powder, and cayenne.
- In a hot skillet, melt butter and coat the pan. Sprinkle the spice blend on the shrimp and sear in the skillet for 2-3 minutes per side until cooked through.
- Remove shrimp and sauté sliced mushrooms in same skillet until tender.
- Pour in the broth, scraping up any bits from the pan. Add sour cream and stir to create a sauce.
- Toss in the shrimp and cooked noodles until combined.
- Garnish with fresh herbs before serving.
Notes
For lighter options, use Greek yogurt instead of sour cream. This dish can be refrigerated for up to 3 days. Reheat gently to maintain texture.
