Ingredients

- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ tsp salt
- 1 cup brewed coffee (or hot water)
- ½ cup unsalted butter, softened
- 8 oz cream cheese, softened
- 2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and prepare your cupcake pan with liners.
- In a mixing bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, cream the butter and sugar until light and fluffy, then beat in the eggs and vanilla.
- Slowly incorporate dry ingredients and alternating coffee until just combined.
- Fill each liner about two-thirds full and bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow cupcakes to cool before frosting with cream cheese frosting.
Notes
For a lighter version, substitute some butter with applesauce. Ensure all ingredients are at room temperature for better blending.
