- 1 lb Beef Chuck, cut into 1-inch cubes
- 2 Carrots, diced
- 2 Potatoes, diced
- 2 Celery stalks, diced
- 1 cup Green Beans, trimmed
- 1 Onion, diced
- 2 cloves Garlic, minced
- 4 cups Beef Broth
- 1 tbsp Tomato Paste
- 1 tbsp Olive Oil
- 2 sprigs Fresh Thyme
- 1 Bay Leaf
- Salt and Pepper, to taste
- Optional: Red pepper flakes for heat
Instructions
- Heat a skillet over medium-high heat and add olive oil. Sear beef in batches until browned on all sides.
- Add diced onions, carrots, and celery into the pot. Sauté until softened (5–7 minutes).
- Stir in minced garlic and tomato paste; cook until slightly darkened.
- Add beef broth, scraping the bottom to incorporate the flavor. Return beef to the pot along with potatoes and other vegetables.
- Season with herbs, salt, and pepper; bring to a boil. Reduce heat and let it simmer uncovered for 90-120 minutes.
- Taste and adjust seasoning before serving. Consider adding a splash of vinegar for brightness.
Notes
Serve hot, garnished with parsley or Parmesan cheese. Best paired with crusty bread or a green salad.
