Ingredients

  • 1 lb Beef Chuck, cut into 1-inch cubes
  • 2 Carrots, diced
  • 2 Potatoes, diced
  • 2 Celery stalks, diced
  • 1 cup Green Beans, trimmed
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Beef Broth
  • 1 tbsp Tomato Paste
  • 1 tbsp Olive Oil
  • 2 sprigs Fresh Thyme
  • 1 Bay Leaf
  • Salt and Pepper, to taste
  • Optional: Red pepper flakes for heat

Instructions

  1. Heat a skillet over medium-high heat and add olive oil. Sear beef in batches until browned on all sides.
  2. Add diced onions, carrots, and celery into the pot. Sauté until softened (5–7 minutes).
  3. Stir in minced garlic and tomato paste; cook until slightly darkened.
  4. Add beef broth, scraping the bottom to incorporate the flavor. Return beef to the pot along with potatoes and other vegetables.
  5. Season with herbs, salt, and pepper; bring to a boil. Reduce heat and let it simmer uncovered for 90-120 minutes.
  6. Taste and adjust seasoning before serving. Consider adding a splash of vinegar for brightness.

Notes

Serve hot, garnished with parsley or Parmesan cheese. Best paired with crusty bread or a green salad.
