Ingredients

  • 2 pounds beef shank
  • 4 cloves fresh garlic, minced
  • 1 large onion, sliced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 cup dry red wine (or beef broth for non-alcoholic)
  • Fresh thyme, rosemary, or bay leaves
  • Salt and pepper to taste
  • Olive oil for searing (optional)

Instructions

  1. Heat a skillet over medium-high heat and add olive oil. Sear the beef shank on all sides until golden brown.
  2. Layer sliced onions, carrots, and celery at the bottom of the crockpot.
  3. Place the seared beef shank on top of the vegetables.
  4. Pour in the red wine and scrape up any bits from the pan. Add the minced garlic, fresh herbs, and enough beef broth to nearly submerge the meat.
  5. Cover and cook on low for 8 hours or on high for 4-5 hours.
  6. Once cooked, shred the beef with two forks in the crockpot and stir everything together. Adjust seasoning with salt and pepper.
  7. Ladle into bowls and serve hot.
