- 2 pounds beef shank
- 4 cloves fresh garlic, minced
- 1 large onion, sliced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 cup dry red wine (or beef broth for non-alcoholic)
- Fresh thyme, rosemary, or bay leaves
- Salt and pepper to taste
- Olive oil for searing (optional)
Instructions
- Heat a skillet over medium-high heat and add olive oil. Sear the beef shank on all sides until golden brown.
- Layer sliced onions, carrots, and celery at the bottom of the crockpot.
- Place the seared beef shank on top of the vegetables.
- Pour in the red wine and scrape up any bits from the pan. Add the minced garlic, fresh herbs, and enough beef broth to nearly submerge the meat.
- Cover and cook on low for 8 hours or on high for 4-5 hours.
- Once cooked, shred the beef with two forks in the crockpot and stir everything together. Adjust seasoning with salt and pepper.
- Ladle into bowls and serve hot.
