- 2 lbs beef (chuck or stew meat)
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 can (14 oz) crushed tomatoes
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup red wine (dry variety)
- 1 lemon, juiced
- 2 teaspoons oregano
- 1 teaspoon rosemary
- 1 teaspoon cinnamon
- 1 teaspoon pepper
- 2 bay leaves
- Salt to taste
Instructions
- Start by browning the beef in a heavy-bottomed pot over medium heat. Season generously with salt and pepper.
- Remove the beef from the pot and set it aside. In the same pot, add olive oil, onions, and garlic; sauté until fragrant and onions have softened.
- Pour in the red wine, scraping up any bits stuck to the pot. Let simmer until slightly reduced, then add crushed tomatoes.
- Return the beef to the pot, add herbs and spices, stir well, and let the flavors meld for a few minutes.
- Add enough water or beef broth to cover the beef, bring to a gentle boil, then reduce to a simmer. Cover and cook gently for about 90 minutes to 2 hours, or until the beef is tender.
- Add the orzo 15 minutes before the stew is done, stirring occasionally to prevent sticking.
- Once the orzo is al dente, squeeze fresh lemon juice for brightness and adjust seasoning as needed.
- Garnish with fresh herbs and a drizzle of olive oil before serving.
Notes
Pair with crusty bread or a Greek salad. This stew freezes well and can be reheated after cooling completely.
