Description

A comforting and flavorful Greek stew featuring tender beef, orzo pasta, and aromatic spices, perfect for family gatherings.


Ingredients

  • 2 lbs beef (chuck or stew meat)
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 can (14 oz) crushed tomatoes
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup red wine (dry variety)
  • 1 lemon, juiced
  • 2 teaspoons oregano
  • 1 teaspoon rosemary
  • 1 teaspoon cinnamon
  • 1 teaspoon pepper
  • 2 bay leaves
  • Salt to taste

Instructions

  1. Start by browning the beef in a heavy-bottomed pot over medium heat. Season generously with salt and pepper.
  2. Remove the beef from the pot and set it aside. In the same pot, add olive oil, onions, and garlic; sauté until fragrant and onions have softened.
  3. Pour in the red wine, scraping up any bits stuck to the pot. Let simmer until slightly reduced, then add crushed tomatoes.
  4. Return the beef to the pot, add herbs and spices, stir well, and let the flavors meld for a few minutes.
  5. Add enough water or beef broth to cover the beef, bring to a gentle boil, then reduce to a simmer. Cover and cook gently for about 90 minutes to 2 hours, or until the beef is tender.
  6. Add the orzo 15 minutes before the stew is done, stirring occasionally to prevent sticking.
  7. Once the orzo is al dente, squeeze fresh lemon juice for brightness and adjust seasoning as needed.
  8. Garnish with fresh herbs and a drizzle of olive oil before serving.

Notes

Pair with crusty bread or a Greek salad. This stew freezes well and can be reheated after cooling completely.
