- 16 oz cream cheese, softened
- 3 ripe bananas, mashed
- 1 cup brown sugar
- 1/2 cup unsalted butter, melted
- 3 eggs
- 1/4 cup rum (or vanilla extract)
- 1 tsp ground cinnamon
- 1 1/2 cups graham cracker crumbs
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine crushed graham crackers and melted butter. Press into a buttered springform pan to form a crust and bake for 10 minutes. Let cool.
- Beat cream cheese until smooth. Gradually add brown sugar, then mix in mashed bananas.
- Beat in eggs one at a time, then add rum and cinnamon. Mix until smooth.
- Pour cheesecake mixture into cooled crust. Bake for 50-60 minutes, or until edges are set with a slight jiggle in the center.
- Cool for an hour, then refrigerate for at least four hours or overnight.
- Serve topped with whipped cream and a sprinkle of cinnamon.
Notes
For a gluten-free option, substitute graham crackers with gluten-free cookies or almond flour. Allow cheesecake to cool to room temperature before refrigerating to avoid condensation.
