Description

A comforting dessert that combines creamy cheesecake with caramelized bananas, perfect for family gatherings and special occasions.

Ingredients

Scale
  • 16 oz cream cheese, softened
  • 3 ripe bananas, mashed
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 3 eggs
  • 1/4 cup rum (or vanilla extract)
  • 1 tsp ground cinnamon
  • 1 1/2 cups graham cracker crumbs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine crushed graham crackers and melted butter. Press into a buttered springform pan to form a crust and bake for 10 minutes. Let cool.
  3. Beat cream cheese until smooth. Gradually add brown sugar, then mix in mashed bananas.
  4. Beat in eggs one at a time, then add rum and cinnamon. Mix until smooth.
  5. Pour cheesecake mixture into cooled crust. Bake for 50-60 minutes, or until edges are set with a slight jiggle in the center.
  6. Cool for an hour, then refrigerate for at least four hours or overnight.
  7. Serve topped with whipped cream and a sprinkle of cinnamon.

Notes

For a gluten-free option, substitute graham crackers with gluten-free cookies or almond flour. Allow cheesecake to cool to room temperature before refrigerating to avoid condensation.
