  • 3 ripe bananas (mashed)

  • ½ cup melted butter (or coconut oil)

  • ¾ cup sugar (white or brown)

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 ½ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon (optional)

  • ½ cup walnuts or chocolate chips (optional)


Instructions

  • Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.

  • In a bowl, mash bananas until mostly smooth.

  • Stir in melted butter and sugar until combined.

  • Add eggs and vanilla extract, mixing well.

  • In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.

  • Gently fold dry ingredients into the banana mixture. Do not overmix.

  • Stir in walnuts or chocolate chips if using.

  • Pour batter into the prepared loaf pan.

  • Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.

 

  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Best Bananas: Use very ripe bananas with brown spots for the sweetest flavor.

  • Substitutions: Swap butter with coconut oil for a dairy-free version, or use whole wheat flour for a heartier loaf.

  • Storage: Wrap banana bread in plastic wrap or store in an airtight container at room temperature for up to 3 days. Refrigerate for up to 1 week.

  • Freezing: Wrap the cooled loaf (or individual slices) tightly in plastic wrap and freeze for up to 3 months. Thaw at room temperature or warm gently in the oven.
