Ingredients
3 ripe bananas (mashed)
½ cup melted butter (or coconut oil)
¾ cup sugar (white or brown)
2 large eggs
1 tsp vanilla extract
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 tsp cinnamon (optional)
½ cup walnuts or chocolate chips (optional)
Instructions
Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
In a bowl, mash bananas until mostly smooth.
Stir in melted butter and sugar until combined.
Add eggs and vanilla extract, mixing well.
In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
Gently fold dry ingredients into the banana mixture. Do not overmix.
Stir in walnuts or chocolate chips if using.
Pour batter into the prepared loaf pan.
Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Best Bananas: Use very ripe bananas with brown spots for the sweetest flavor.
Substitutions: Swap butter with coconut oil for a dairy-free version, or use whole wheat flour for a heartier loaf.
Storage: Wrap banana bread in plastic wrap or store in an airtight container at room temperature for up to 3 days. Refrigerate for up to 1 week.
Freezing: Wrap the cooled loaf (or individual slices) tightly in plastic wrap and freeze for up to 3 months. Thaw at room temperature or warm gently in the oven.
