Ingredients
- Bone-in, skin-on chicken thighs or breasts
- Unsalted butter (or olive oil for a lighter version)
- Fresh lemons (zest and juice)
- Fresh garlic cloves (or garlic powder as a substitute)
- Fresh thyme or rosemary (dried herbs can work too)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken dry with paper towels.
- In a small skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant, then stir in lemon zest, juice, herbs, salt, and pepper.
- Place chicken in a baking dish and pour lemon butter sauce over it, reserving some for basting.
- Bake for 30-35 minutes, or until chicken reaches an internal temperature of 165°F (75°C).
- Baste chicken halfway through cooking; broil for the last 2-3 minutes for a crispy finish.
- Let rest for 5 minutes before serving.
Notes
Consider adding sautéed mushrooms during the last ten minutes of baking for an earthy touch.
