A delicious and healthy meal option featuring roasted sweet potatoes topped with creamy avocado and a protein-packed egg.

Ingredients

Scale
  • 2 medium sweet potatoes
  • 1 ripe avocado
  • 2 eggs
  • Salt to taste
  • Pepper to taste
  • Olive oil (optional)
  • Red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes lengthwise into 1/4 inch thick slices.
  3. Arrange the slices on a baking sheet and drizzle with olive oil, if using. Sprinkle with salt and pepper.
  4. Bake for about 20-25 minutes, flipping halfway through until they are tender and crispy on the edges.
  5. Cook the eggs to your liking (poached, fried, or scrambled).
  6. Mash the avocado in a bowl and season with salt and pepper.
  7. Once the sweet potato slices are done, spread the mashed avocado on top and add the cooked egg.
  8. Sprinkle with red pepper flakes if desired and serve immediately.

Notes

Choose sweet potatoes that are firm and blemish-free for the best flavor. Let the sweet potatoes cool slightly before adding the avocado.
