- 2 medium sweet potatoes
- 1 ripe avocado
- 2 eggs
- Salt to taste
- Pepper to taste
- Olive oil (optional)
- Red pepper flakes (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes lengthwise into 1/4 inch thick slices.
- Arrange the slices on a baking sheet and drizzle with olive oil, if using. Sprinkle with salt and pepper.
- Bake for about 20-25 minutes, flipping halfway through until they are tender and crispy on the edges.
- Cook the eggs to your liking (poached, fried, or scrambled).
- Mash the avocado in a bowl and season with salt and pepper.
- Once the sweet potato slices are done, spread the mashed avocado on top and add the cooked egg.
- Sprinkle with red pepper flakes if desired and serve immediately.
Notes
Choose sweet potatoes that are firm and blemish-free for the best flavor. Let the sweet potatoes cool slightly before adding the avocado.
