  • Author: Marlene Quinn
  • Total Time: 35 minutes
  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

A cherished family recipe for soft masa cakes filled with savory beans, cheese, and mushrooms, embodying warmth and tradition.

Ingredients

Scale
  • 2 cups masa harina
  • 1 pinch salt
  • Warm water
  • Black beans or pinto beans
  • Cotija or queso fresco cheese
  • Finely chopped mushrooms
  • Garlic
  • Olive oil
  • Salsa, crema, or sliced avocado (optional garnishes)

Instructions

  1. In a mixing bowl, combine masa harina with a pinch of salt. Gradually add warm water, mixing until a soft, pliable dough forms.
  2. If using beans, mash them and season with salt and spices. For mushroom filling, sauté mushrooms with garlic and herbs in olive oil until tender.
  3. Shape dough into a thick disc, create an indentation, add filling, fold and seal, then flatten into a patty.
  4. Heat skillet over medium-high heat, coat with oil, and cook Tlacoyos for about 4-5 minutes per side until golden brown.
  5. Serve warm with your favorite toppings.

Notes

Let the masa rest for 10-15 minutes before shaping to ensure it hydrates thoroughly. Avoid overstuffing the Tlacoyos to prevent them from breaking during cooking.
