Description

A comforting chicken noodle soup enriched with the aromatic flavors of ginger and garlic, perfect for chilly evenings.


Ingredients

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1.5 lbs bone-in chicken thighs (or boneless chicken breasts)
  • 6 cups chicken stock
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons soy sauce
  • 8 oz egg noodles (or rice noodles or zucchini noodles)
  • 8 oz shiitake mushrooms, sliced (or cremini/button mushrooms)
  • Fresh cilantro or green onions, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and ginger, stirring until fragrant and golden, about 2-3 minutes.
  2. Add chicken pieces to the pot and cook until browned on all sides.
  3. Pour in chicken stock and season with salt, pepper, and soy sauce. Bring to a gentle simmer.
  4. Add mushrooms and noodles after about 20 minutes of simmering. Cook until noodles are tender, about 5-7 minutes.
  5. Stir in freshly chopped herbs just before serving, adjusting seasoning to taste.
  6. Ladle soup into bowls, garnish with cilantro, and enjoy.

Notes

Allow garlic and ginger to caramelize gently for enhanced flavor. Store leftovers airtight in the refrigerator for up to 3 days or freeze for up to 3 months.
