Ingredients

- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1.5 lbs bone-in chicken thighs (or boneless chicken breasts)
- 6 cups chicken stock
- Salt to taste

- 2 tablespoons soy sauce
- 8 oz egg noodles (or rice noodles or zucchini noodles)
- 8 oz shiitake mushrooms, sliced (or cremini/button mushrooms)
- Fresh cilantro or green onions, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add minced garlic and ginger, stirring until fragrant and golden, about 2-3 minutes.
- Add chicken pieces to the pot and cook until browned on all sides.
- Pour in chicken stock and season with salt, pepper, and soy sauce. Bring to a gentle simmer.
- Add mushrooms and noodles after about 20 minutes of simmering. Cook until noodles are tender, about 5-7 minutes.
- Stir in freshly chopped herbs just before serving, adjusting seasoning to taste.
- Ladle soup into bowls, garnish with cilantro, and enjoy.
Notes
Allow garlic and ginger to caramelize gently for enhanced flavor. Store leftovers airtight in the refrigerator for up to 3 days or freeze for up to 3 months.
