Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup brown sugar
  • ½ cup unsalted butter, softened
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 2 cups tart apples, peeled and chopped
  • ¼ cup sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1 cup oats
  • ¼ cup melted butter (for crumble topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and vanilla until fluffy.
  3. Gradually blend in the flour, baking powder, and salt until a soft dough forms.
  4. In another bowl, toss the chopped apples with sugar, cinnamon, and lemon juice.
  5. Press a tablespoon of dough into each muffin tin to form a cup.
  6. Spoon the apple mixture into each cookie cup.
  7. Mix oats, flour, brown sugar, and melted butter for the crumble topping, then sprinkle over the apples.
  8. Bake for 20–25 minutes until bubbly and golden brown.
  9. Let cool slightly before removing from the tin and serve warm.
