Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 large egg (or flax egg)
- 2 cups chopped fresh apples (Honeycrisp, Fuji, or Granny Smith)
- For the Maple Icing:
- 1 cup powdered sugar
- 1/4 cup pure maple syrup
- 1–2 tablespoons milk or water
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and nutmeg.
- In another bowl, cream together butter and brown sugar until light and fluffy (about 3-5 minutes).
- Add the egg (or flax egg) and mix until well combined.
- Gradually mix in the dry ingredients until just combined.
- Gently fold in chopped apples being careful not to overmix.
- Drop rounded mounds of dough onto prepared sheets, spaced about 2 inches apart.
- Bake for 10-12 minutes or until lightly golden around the edges.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Drizzle with maple icing after cooling.
Notes
Keep apples bite-sized for even texture. Consider topping with chopped nuts before baking for added crunch.
