Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg (or flax egg)
  • 2 cups chopped fresh apples (Honeycrisp, Fuji, or Granny Smith)
  • For the Maple Icing:
  • 1 cup powdered sugar
  • 1/4 cup pure maple syrup
  • 12 tablespoons milk or water

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and nutmeg.
  3. In another bowl, cream together butter and brown sugar until light and fluffy (about 3-5 minutes).
  4. Add the egg (or flax egg) and mix until well combined.
  5. Gradually mix in the dry ingredients until just combined.
  6. Gently fold in chopped apples being careful not to overmix.
  7. Drop rounded mounds of dough onto prepared sheets, spaced about 2 inches apart.
  8. Bake for 10-12 minutes or until lightly golden around the edges.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Drizzle with maple icing after cooling.

Notes

Keep apples bite-sized for even texture. Consider topping with chopped nuts before baking for added crunch.
