- 5–6 medium firm apples (such as Granny Smith, Honeycrisp, or Braeburn)
- 1 cup high-quality apple butter
- 1/2 cup packed brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/8 teaspoon nutmeg
- 2 tablespoons cornstarch
- 1 tablespoon butter (for sautéing apples)
- Optional: toasted pecans or walnuts, brandy or cider, fresh herbs like thyme
Instructions
- Preheat your oven to 400°F (205°C).
- Roll out half of your chilled pie dough and line a 9-inch pie pan.
- Core and slice apples into 1/4-inch slices and sauté in a skillet with butter until they begin to soften.
- In a bowl, combine apple butter, brown sugar, lemon juice, cinnamon, cloves, nutmeg, and cornstarch.
- Fold in the sautéed apples and pour the filling into the prepared crust. Dot with butter.
- Roll out the second dough disk, cut vents, and seal the pie. Brush with egg wash and sprinkle with coarse sugar.
- Bake at 400°F for 20 minutes, then reduce to 350°F (175°C) for 30–40 minutes until golden.
- Let the pie cool for at least two hours before slicing.
Notes
Cool the pie on a wire rack to avoid a soggy crust. Use a mix of apple varieties for complexity and flavor.
