Ingredients
2 cups grated zucchini
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour (optional)
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp nutmeg (optional)
2 large eggs
1/2 cup vegetable oil
1/2 cup granulated sugar
1/2 cup brown sugar
1 tsp vanilla extract
1/2 cup chopped walnuts or pecans (optional)
1/2 cup chocolate chips (optional)
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. Grate zucchini and squeeze out excess moisture with a clean towel.
3. In a medium bowl, whisk together flours, baking soda, baking powder, salt, cinnamon, and nutmeg.
4. In a large bowl, beat eggs, oil, sugars, and vanilla until combined.
5. Stir in zucchini.
6. Gradually add dry ingredients to wet ingredients, mixing until just combined.
7. Fold in nuts or chocolate chips if using.
8. Pour batter into prepared loaf pan and smooth the top.
9. Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.
10. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Store in an airtight container for up to 5 days or freeze up to 3 months. Try substituting half the oil with applesauce for a lighter loaf.
