Ingredients
3–4 ripe bananas, mashed
1/2 cup unsalted butter, softened (or coconut oil)
3/4 cup sugar (granulated or brown sugar)
2 large eggs
1 1/2 cups all-purpose flour (or whole wheat flour)
1 tsp baking soda
1/4 tsp salt
1 tsp vanilla extract
Optional: 1/2 cup chopped walnuts, pecans, or chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
2. Mash bananas in a large bowl until smooth.
3. In another bowl, cream butter and sugar until light and fluffy.
4. Add eggs one at a time, then stir in vanilla.
5. In a separate bowl, whisk together flour, baking soda, and salt.
6. Gradually mix dry ingredients into wet ingredients.
7. Fold in mashed bananas and optional add-ins.
8. Pour batter into loaf pan and smooth top.
9. Bake for 60–65 minutes or until toothpick comes out clean.
10. Cool 10 minutes in pan, then transfer to wire rack.
Notes
Use overripe bananas for best flavor.
Avoid over-mixing for a soft, fluffy texture.
Store at room temperature 3–4 days, or freeze up to 3 months.
