Description

Ingredients

1 cup pumpkin puree

1/2 cup unsalted butter (or coconut oil)

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg (or flax egg)

1 1/2 cups all-purpose flour (or gluten-free blend)

3/4 cup graham cracker crumbs

1 tsp cinnamon

1/2 tsp nutmeg

1 tsp baking soda

1/4 tsp salt

3/4 cup chocolate chips

1 cup mini marshmallows


Instructions

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. In a large bowl, cream butter, brown sugar, and granulated sugar.

3. Add pumpkin puree and egg, mix until smooth.

4. In another bowl, whisk together flour, graham cracker crumbs, spices, baking soda, and salt.

5. Gradually add dry ingredients to wet ingredients. Do not overmix.

6. Fold in chocolate chips and mini marshmallows.

7. Scoop dough onto prepared sheets, spacing evenly.

8. Bake for 12–15 minutes until edges are golden.

9. Cool on baking sheet before transferring to rack.

Notes

Avoid using pumpkin pie filling.

Chill dough for 30 mins to prevent spreading if your kitchen is warm.

Top with extra marshmallows before baking for a gooey look.
