- 1 cup pumpkin puree
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- A pinch of ginger
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add in the pumpkin puree, egg, and vanilla extract; mix until well combined.
- In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and ginger.
- Gradually add the dry ingredients to the wet mixture, stirring until just incorporated.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until edges are lightly golden and the center looks slightly soft.
- Allow cookies to cool on the baking sheet for about 5 minutes before transferring to wire racks to cool completely.
Notes
For a glaze, mix cream cheese with powdered sugar or sprinkle with cinnamon sugar for extra sweetness.
