Ingredients
1 cup unsalted butter, softened
1 cup brown sugar
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup finely chopped pineapple (well-drained)
¾ cup crushed walnuts or pecans (optional)
A pinch of ground cinnamon
Instructions
1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. Cream butter, brown sugar, and granulated sugar until fluffy.
3. Beat in eggs one at a time, then add vanilla extract.
4. In a separate bowl, whisk flour, baking soda, salt, and cinnamon.
5. Gradually mix dry ingredients into wet ingredients until just combined.
6. Gently fold in chopped pineapple and optional nuts.
7. Scoop heaping tablespoons of dough onto lined sheets.
8. (Optional) Spoon a small amount of pineapple glaze mixture on top.
9. Bake for 12–14 minutes, until edges are golden.
10. Cool on baking sheets for 2–3 minutes, then transfer to wire racks.
