Description

This Vegan Pecan Log is a chewy, crunchy, and naturally sweet treat made with dates, nuts, and a hint of vanilla. It’s perfect for snacking, gifting, or enjoying with a hot drink.


Ingredients

Scale

1 cup Medjool dates, pitted

1/2 cup pecans, chopped

1/4 cup almonds or walnuts (optional), chopped

1 tablespoon maple syrup

1/2 teaspoon vanilla extract

Pinch of salt


Instructions

1. Place dates, maple syrup, vanilla, and salt in a food processor. Blend until smooth and sticky.

2. Transfer mixture to a bowl and fold in chopped pecans (and other nuts if using).

3. Form the mixture into a log shape using your hands or plastic wrap.

4. Wrap tightly in parchment or plastic wrap and refrigerate for at least 1 hour to firm up.

5. Slice and serve. Store leftovers in the fridge.

Notes

Chill before slicing for best texture.

Feel free to roll the log in extra chopped pecans for added crunch.
