Ingredients

1 cup rolled oats

1/2 cup protein powder (vanilla or chocolate flavor)

1/4 cup natural nut butter (almond or peanut)

1/4 cup honey or maple syrup

1/2 cup dark chocolate chips

1/4 cup fresh mint leaves, finely chopped (or 1/2 tsp mint extract)

Pinch of salt


Instructions

1. In a mixing bowl, combine oats and protein powder.

2. Stir in nut butter, sweetener (honey or maple syrup), mint, and salt.

3. Fold in chocolate chips until evenly distributed.

4. Scoop out portions and roll into 1-inch balls using slightly damp hands.

5. Place on a parchment-lined tray and refrigerate for 30 minutes to set.

6. Store in an airtight container in the fridge or freezer.

Notes

If the mixture is too dry, add a bit more nut butter. Too wet? Add more oats. Swap fresh mint with extract as needed.
