Description

Warm, chewy Maple Pumpkin Cookies made with pure pumpkin puree and sweetened naturally with maple syrup. A perfect cozy fall treat.


Ingredients

1/2 cup unsalted butter, softened

1/2 cup pure maple syrup

1/2 cup pumpkin puree

1 large egg

1 tsp vanilla extract

1 1/2 cups all-purpose flour (or half whole wheat)

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ground ginger

1/4 tsp allspice (optional)

1 cup rolled oats (optional)

1/2 cup chocolate chips or chopped nuts (optional)


Instructions

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a bowl, cream butter and maple syrup until light and fluffy.

3. Add pumpkin puree, egg, and vanilla. Mix until combined.

4. In a separate bowl, whisk flour, baking soda, baking powder, salt, and spices.

5. Gradually add dry ingredients to the wet mixture. Stir gently until just combined.

6. Fold in oats, chocolate chips, or nuts if using.

7. Scoop dough onto baking sheet, spacing apart. Flatten slightly if desired.

8. Bake 10–12 minutes until edges are lightly golden.

9. Cool for 5 minutes on the tray, then transfer to a wire rack.

Notes

For a maple glaze, whisk together 1/2 cup powdered sugar, 1 tbsp maple syrup, and a splash of milk. Drizzle on cooled cookies.
