Ingredients

  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons fresh chopped herbs (such as basil and parsley)

Instructions

  1. Combine dry ingredients: In a large bowl, whisk together the flour, salt, and yeast.
  2. Add wet ingredients: Gradually pour in warm water and olive oil, mixing until a slightly sticky dough forms.
  3. Knead the dough: Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.
  4. Incorporate herbs and cheese: Gently fold in the mozzarella, parmesan, and chopped herbs.
  5. First rise: Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1-2 hours until doubled in size.
  6. Shape into loaf: Punch down the risen dough and shape it into a loaf.
  7. Second rise: Let the shaped dough rise again on a parchment-lined baking sheet for about 30-45 minutes.
  8. Preheat and bake: Preheat oven to 375°F (190°C). Score the surface of the loaf and bake for about 25-30 minutes until golden brown and hollow-sounding when tapped.
  9. Cool and enjoy: Allow to cool on a wire rack before slicing.

Notes

For an extra twist, try adding roasted garlic or sautéed mushrooms to the dough.
