Ingredients

- 3 cups all-purpose flour
- 2 teaspoons instant yeast
- 1 teaspoon salt
- 1 cup warm water (around 110°F)
- 1/4 cup olive oil
- 3 cloves minced garlic (optional)
- 2 tablespoons finely chopped fresh rosemary
Instructions
- In a large bowl, combine flour, instant yeast, and salt. Mix well.
- In a separate bowl, whisk together warm water and olive oil; add minced garlic if desired.
- Pour wet ingredients into dry ingredients and mix until a shaggy dough forms. Knead on a floured surface for about 5 minutes until smooth.
- Place dough in an oiled bowl, cover with a damp towel, and let rise for about 1 hour until doubled.
- Punch down the dough and fold in chopped rosemary. Divide into 12 pieces, shape into muffins, and place in a greased muffin tin. Let rise for another 30 minutes.
- Preheat oven to 400°F (200°C). Drizzle olive oil on muffins and sprinkle with coarse sea salt.
- Bake for 15-20 minutes until golden brown.
- Allow to cool for 5 minutes in the tin before transferring to a wire rack.
Notes
For best results, allow the muffins to cool fully before enjoying. Substitute dried herbs if fresh rosemary is unavailable.
