- 2 cups cooked chicken, shredded
- 1 cup long-grain white or brown rice
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 sweet onion, chopped
- 2 cups shredded cheddar and Monterey Jack cheese
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 cup tomato sauce
- Olive oil (for sautéing)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the rice according to package instructions, seasoning with a pinch of salt.
- In a large skillet, heat olive oil over medium heat, add onions and bell peppers, and sauté until softened, about 5-7 minutes.
- Sprinkle in garlic powder, chili powder, cumin, and salt, and mix well.
- In a mixing bowl, combine the cooked chicken, sautéed vegetables, cooked rice, and half of the cheese. Stir in the tomato sauce until well mixed.
- Pour the mixture into a greased 9×13 inch baking dish and spread evenly.
- Top with the remaining cheese.
- Bake for about 25-30 minutes or until the cheese is bubbly and slightly golden.
- Cool for a few minutes before serving. Garnish with fresh cilantro, sour cream, or guacamole as desired.
Notes
Use fresh ingredients for the best flavor. Be careful not to overcook the rice before adding it to the casserole.
