- 1 cup all-purpose flour
- 1 cup grated aged cheddar or Gruyére cheese
- ½ teaspoon salt
- Freshly cracked pepper to taste
- Pinch of red pepper flakes (optional)
- 2 tablespoons fresh basil, finely chopped
- 2 tablespoons fresh rosemary, finely chopped
- 4 tablespoons unsalted butter, cold and cubed
- 2–3 tablespoons cold water
Instructions
- Preheat your oven to 350°F (180°C).
- In a bowl, combine flour, grated cheese, salt, and pepper. Add red pepper flakes if desired.
- Incorporate fresh herbs into the dry mixture.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Slowly add cold water, mixing until the dough comes together.
- Roll the dough out to ¼-inch thickness and cut into desired shapes.
- Place the crackers on a lined baking sheet and bake for 12-15 minutes until golden brown.
- Cool on a wire rack before serving.
Notes
For best results, avoid overworking the dough and allow the crackers to cool completely for maximum crunch.
