Description

Deliciously crispy crackers made with aged cheese and fresh herbs, perfect for snacking and entertaining.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup grated aged cheddar or Gruyére cheese
  • ½ teaspoon salt
  • Freshly cracked pepper to taste
  • Pinch of red pepper flakes (optional)
  • 2 tablespoons fresh basil, finely chopped
  • 2 tablespoons fresh rosemary, finely chopped
  • 4 tablespoons unsalted butter, cold and cubed
  • 23 tablespoons cold water

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a bowl, combine flour, grated cheese, salt, and pepper. Add red pepper flakes if desired.
  3. Incorporate fresh herbs into the dry mixture.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Slowly add cold water, mixing until the dough comes together.
  6. Roll the dough out to ¼-inch thickness and cut into desired shapes.
  7. Place the crackers on a lined baking sheet and bake for 12-15 minutes until golden brown.
  8. Cool on a wire rack before serving.

Notes

For best results, avoid overworking the dough and allow the crackers to cool completely for maximum crunch.
