1 tbsp fresh rosemary or thyme (or 1 tsp dried)

1 tbsp olive oil (for sautéing mushrooms)


Instructions

1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

2. In a skillet, sauté chopped mushrooms in olive oil over medium heat until tender and moisture is gone. Let cool.

3. In a mixing bowl, cream butter with brown sugar and granulated sugar until light and fluffy.

4. Beat in eggs and vanilla extract until well combined.

5. In a separate bowl, whisk flour, baking soda, cinnamon, and nutmeg together.

6. Gradually mix dry ingredients into wet ingredients until just combined.

7. Fold in cooled mushrooms and herbs.

8. Chill dough for 30 minutes for best texture.

9. Scoop tablespoons of dough onto prepared sheets. Bake 10–12 minutes until edges are golden.

10. Let cookies cool on sheet for 5 minutes, then transfer to wire rack.

Notes

Try substituting almond flour for a nutty twist.

Sprinkle a bit of shredded parmesan on top before baking for added flavor.
