These Banana Bread Cookies are the perfect mashup of classic banana bread flavor in soft, chewy cookie form. A nostalgic, comforting treat made with ripe bananas and warm spices.
Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 tsp vanilla extract
1 cup mashed ripe bananas (about 2 bananas)
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp ground cinnamon
1/2 cup chopped walnuts or pecans (optional)
1/2 cup chocolate chips (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
3. Add the egg, vanilla extract, and mashed bananas. Mix until combined.
4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
5. Gradually add dry ingredients to the wet mixture. Stir until just combined.
6. Fold in nuts or chocolate chips if desired.
7. Scoop tablespoon-sized portions of dough onto prepared baking sheet, spacing them apart.
8. Bake for 10–12 minutes, or until edges are golden and centers are just set.
9. Cool for 2–3 minutes on the pan before transferring to a wire rack to cool completely.
Notes
Store in an airtight container for up to 4 days or freeze baked cookies for longer freshness. Add a sprinkle of sea salt on top before baking for a sweet-salty twist.
