Ingredients
For the Cake:
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
¾ cup granulated sugar
2 large eggs
½ cup unsalted butter, softened
1 cup buttermilk
2 cups peeled and diced apples (about 2–3 medium apples)
For the Crumb Topping:
1 cup all-purpose flour
½ cup brown sugar
½ cup rolled oats
1 teaspoon cinnamon
½ cup cold unsalted butter, cubed
Instructions
1. Preheat oven to 350°F (175°C) and grease or line a 9×13-inch baking pan.
2. Mix apples with 1 tbsp sugar and optional cinnamon. Let sit 10 minutes.
3. Whisk flour, baking powder, baking soda, salt, and cinnamon in a bowl.
4. Cream butter and sugar until light and fluffy.
5. Add eggs one at a time, then mix in buttermilk.
6. Gradually add dry ingredients to wet. Stir until just combined.
7. Fold in apples gently.
8. Make crumb topping: mix flour, oats, sugar, cinnamon, and cut in butter until crumbly.
9. Spread cake batter into pan. Add crumb topping evenly on top.
10. Bake for 35–45 minutes or until toothpick comes out clean.
11. Cool 15 minutes in pan, then transfer to wire rack.
Notes
Add a splash of vanilla extract for extra richness.
Use Greek yogurt as a substitute for buttermilk if needed.
Freeze slices individually wrapped for future snacking.
